My First WIAW!!!

I’ve never done a “What I Ate Wednesday” post! How exciting! Better late than never, right?

I woke up this morning torn between my two favorite breakfasts’: PBB&HM (Peanut Butter, Banana & Honey Muffinwich, obvi!) and my own version of the Egg McMuffin. So, naturally I decided to make both (minus the banana, I saved that for later)!

That definitely hit the spot; it was the perfect combination of sweet and savory!

I got hungry after a few hours in the cubicle, so next up on the list was a yummy Clif Mojo bar. This one was the “Dipped Chocolate Peanut” bar and it was really, really good! I liked the combination of salty and sweet (can you tell I’m diggin’ the juxtaposed flavor palates today?).

Next up: lunchtime! I skipped out on food trucks with the coworkers because I was trying to save money (and my waistline). Womp womp! But I still had a pretty tasty lunch: a bowlful of my Chicken Taco Stew (recipe tomorrow!), topped with some avocado and homemade tortilla chips! I got a little distracted while baking my chips (thanks to this blog!), so they were more on the well-done side. Still, delish!

Snack #2 became necessary around 3:45, since I knew I was going to have a pretty hardcore HIIT treadmill/upper body strength workout at around 5:15 or so. I brought a banana and a TBS of peanut butter with me to work today, so I snacked on that while psyching myself up for the end of the workday.

Oh, and I accidentally ate it before I could snap a photo :).

My workout consisted of an awesome upper body strength workout from BessBeFit, and a hardcore HIIT treadmill workout from Peanut Butter Fingers. Needless to say, I was exhausted afterwards. I got home and was too tired to make anything other than a protein smoothie for dinner. Thank goodness my husband had softball practice!

I like the make my smoothies with 1 packet of Advocare Meal Replacement (Vanilla), 1 TBS of PB2 (powdered peanut butter, essentially), and a little cinnamon. It is sooo good and refreshing after a hard workout!

Well, that’s it! Yay for my first WIAW! Here’s to many more!

Pizza Night!

Last night was definitely PIZZA NIGHT in my household! The husband and I both have been craving pizza for awhile now, and finally decided to whip up a semi-healthy version for dinner. We used a gluten-free crust from Whole Foods (no, we aren’t gluten-free, but it was on sale at Whole Foods!)

We topped it with some leftover grilled chicken, tomato sauce (sugar free), fresh mozzarella, tomatoes, and a sprinkle of cheddar. Check out the pretty pre-cooked pizza:

Final verdict: good-not-great. The crust is NOT one that I would recommend. It fell apart quickly, and had an odd taste to it. Luckily, gluten doesn’t bother us (yet), so I will be going back to whole-wheat crust ASAP. It did help satisfy our pizza cravings, though, so that’s a positive.

Next time, I’d like to add on some extra veggies and a base of spinach to make it more nutritious.

Happy Friday!

Hooray, it’s Friday! Finally.

(Cue Rebecca Black……..now).

I love Friday’s. And this is mainly due to my current job. I love where I work. Although it may not be the most exciting job out there, the people are great and the perks are substantial. Besides the typical (yet outstanding) retirement, health, and insurance benefits we get, we also have the luxury of getting EVERY OTHER FRIDAY off. Yes, it’s true. An extra 26 vacation days a year…on top of the 17 we get already. It’s insane. I remember thinking it was some sort of trick when I was interviewing for the position….but no. It’s real.

Lucky for me, thanks to Good Friday happening when it did this year, I was blessed with THREE Friday’s off in a row. It was magical. So you can imagine how hard it is for me to work a 5 day week this week! (My hardworking husband literally gets angry with me everytime I mention this, but hopefully you readers will understand….right?)

Ok, ok. Enough of me being a brat 🙂

I really do love Friday’s, despite my company perks, as I’m sure you all do. I started mine off with a pretty bangin’ breakfast.

I scrambled 1 egg with 1/2 cup egg whites and topped with just a pinch of cheese. I also cooked up some rolled oats, added a TBS of yummy apple butter, and topped that off with slivered almonds.

Yum! This is one my go-to breakfasts I usually have in the mornings that will fill me up for a majority of the morning. Naturally, I forgot to add the chia seeds I talked about in the last post – typical. It was early. Maybe tomorrow I’ll remember to give them a shot. Tonight I’m hoping the husband takes me somewhere on a date that includes margaritas. Fingers crossed!

Hello, world!

I’ve decided to join the masses and start my own blog!  I recently got married, and have struggled with finding a balance between being a good wife and simply taking care of ME. Eating right and working out are two things that I am (trying to be more) passionate about, so hopefully this blog will not only help out, but also be an outlet to meet others who are just like me!

I was reading some articles online, and stumbled across this little gem, which told me that it’s common for newlyweds to gain up to 10 pounds after getting hitched!  Yikes. I hope you’ll walk with me through this crazy adventure called marriage, as I try to successfully balance healthy eating (squash), healthy living (squats), and maintaining a healthy relationship with the hubs.
